Sweet Chilli Chicken

This recipe was sent to me by an online friend in Australia. The recipe was on a tag (included with bottles of HP Sauce) as part of a promotional campaign entitled “warming winter recipes”.

HP Sweet Chilli Chicken

Ingredients

    4 chicken breasts
    1 1/2 cup Thai Sweet Chilli Sauce
    100g Sun-dried tomatoes
    5 Tbsp. Cider vinegar
    60g Brown sugar,
    1/2 cup (125ml) HP Sauce
    2 Tbsp. Lea & Perrins Worchestershire Sauce
    Salt and Black pepper to taste.

Preparation:

  • In a blender, add Thai Sweet Chilli Sauce, sun-dried tomatoes, cider vinegar, brown sugar, HP Sauce and Lea & Perrins Worchestershire Sauce.
  • Blend to smooth puree, season with salt and black pepper.
  • Marinate chicken pieces for 2-8 hours (or overnight if desired) in fridge.
  • Oven bake on a medium heat for 30 mins to 45 mins.
  • Can be served with rice or roasted potatoes and steamed vegetables.

Cooking: 45 mins
Serves: 4
